Peppermint Rice Krispies Treats

Rice Krispie Treats are the BEST! Upgrade the traditional recipe with peppermint flavor and white chocolate! These Christmas Rice Krispie treats are perfect for your next holiday get together. 


There’s nothing better than a big pan of warm Rice Krispie Treats. It’s a family favorite and a classic classroom treat. If you want to add holiday flair to the traditional dessert, try this spin!

You will need Rice Krispies cereal (or your favorite generic option), butter, mini marshmallows, white candy melts, and peppermints.

Line an 8 x 8 baking dish with wax paper or foil. If you use foil, make sure to spray with non-stick cooking spray! Add butter and mini marshmallows to a medium pan on low heat. Stir occassionally.


Once the marshmallows melt about 3/4 of the way, add in the Rice Krispies and fold into the marshmallow mixture. Add in a 1/4 cup of crushed peppermints and stir to combine.


Pour 4 oz of the white candy melts into a microwave-safe dish. Heat in the microwave in 30-second increments, stirring occasionally until melted. Remove from the microwave and let cool a few minutes.


Pour the melted chocolate over the top of the Rice Krispie Treats and use the back of a spoon or spatula to evenly spread over the top of the treats.

Sprinkle extra crushed peppermints on top of the melted chocolate.


Place the Rice Krispie Treats in the fridge for 20 minutes to let the chocolate set. Cut into 9 squares and enjoy.

Ingredients

  • 3 cups Rice Krispies Cereal (or off brand if you prefer)
  • 2 tbsp butter
  • 5 oz mini marshmallows (1/2 of a 10 oz package)
  • 12 oz package of Wilton bright white candy melts
  • 1/4 cup crushed candy canes or starlight peppermints + extra to sprinkle on top

Instructions

  2. Add the butter and mini marshmallows to a medium size saucepan.
  3. Heat on low-medium heat, stirring occasionally.
  4. Once the marshmallows melt about 3/4 of the way, add in the Rice Krispies and fold into the marshmallow mixture.
  5. Add in the 1/4 cup of crushed peppermints and stir to combine.
  6. Pour the mixture into the prepared baking dish and press down using the back of the spoon.
  7. Pour 4 oz of the white candy melts into a microwave-safe dish. Heat in the microwave in 30 second increments, stirring occasionally until melted.
  8. Remove from the microwave and let cool a few minutes.
  9. Pour the melted chocolate over the top of the Rice Krispie Treats and use the back of a spoon or spatula to evenly spread over the top of the treats.
  10. Sprinkle extra crushed peppermints on top of the melted chocolate.
  11. Place the Rice Krispie Treats in the fridge for 20 minutes to let the chocolate set.
  12. Cut into 9 squares and enjoy.
