I sometimes forget to eat lunch. I know that is never a good idea, but sometimes I Can’t help it. I end up running an errand and don’t make it home until dinner, or I plow through my day to meet a 5 p.m. deadline. Sometimes I cook lunch for my son, and I forget that I don’t really want a toddler style version of mac and cheese. I end up going without or eating too much at dinner time. I’ve made a conscious effort to be a bit more intentional with my time lately, and that includes waking up earlier. I start my day with a glass of water, map out my hours in my planner, and I meal plan three meals a day.
When I write down just what I’m eating and when, I’m more likely to stick to the schedule. I also am able to choose from healthier options and use what works. Since I mentioned already that I’m always pressed for time, I know that I need to shop for convenient options. I was happy to find Ready Pac Bistro Bowl Chicken Caesar Salads sold in packs of two for easy eating!
Since I shop at Costco pretty regularly, it’s easy to buy a few boxes of simple to eat and serve salads for weekday lunches. I never have to worry about what to eat for lunch any longer since this is one easy lunch idea!
Perhaps the best part of these bistro bowls is that there is a fork inside. You won’t get to work without silverware and have to scavenge through the break room to find one. To create a delicious and refreshing lunch, pair your chicken caesar salad with an infused water recipe.
I put mint in just about everything. I am actually growing my own mint in my very first garden! I am so excited to infuse this flavor into my recipes, and the very first way that I tried my homegrown mint was in an infused water.
Kiwi is my favorite summer fruit, and I thought it would taste great in a tropical inspired water. I recently had pineapple water, so I knew that kiwi would be a good fit too. Serve over lots of ice, and you can enjoy the refreshing flavor of summer in a glass!Print
- 2 sliced kiwis
- 1 gallon of water, iced
- 6 sprigs of mint
- Combine all ingredients in a pitcher.
- Serve ice cold!
Water is more fun when it’s fruity. 😉 I also have special water bottles with “baskets” that let me store sliced fruit in. If you have those, try pairing kiwi and mint! You can also make individual servings in cute mason jars. Add a cute striped straw, and you’re on your way to being more hydrated!
This infused water pairs so well with the chopped lettuce, cheese, and chicken. The bistro bowl is packed accordingly and has all of the ingredients separate. You won’t have to worry about soggy lettuce in this set!
How do you enjoy lunch? What do you pair with your salads?
