Spicy Spinach Artichoke Dip

Spicy Spinach Artichoke Dip

A delicious spicy artichoke dip recipe!

Ingredients

  • 1 14 oz. can non-marinated artichoke hearts
  • 1 cup fresh baby leaf spinach
  • 1 small red onion, diced
  • 1/2 cup light mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup grated parmesan cheese
  • 1 tbsp. extra virgin olive oil
  • 1 tsp. lemon juice
  • 1 tsp. hot sauce
  • Salt and pepper, to taste

Instructions

  1. Drain, quarter and dice artichokes.
  2. Preheat oven to 400 degrees.
  3. In large skillet over high heat, add oil, artichoke, spinach and onions until vegetables are lightly sauteed.
  4. In large mixing bowl, combine vegetables, mayo, sour cream, cheeses, hot sauce, lemon juice and salt and pepper.
  5. In greased baking pan, add mixture.
  6. Bake for 20 minutes or until dip turns golden brown.
