To celebrate the season, I wanted to up the ante on our traditional pancakes. Instead of chocolate chips, whipped cream, or even sprinkles… why not try the flavor of Christmas? I’m talking about cranberries! I go nuts for them this time of year since you can use them in cocktails, breakfasts, lunches, dinner… snacks…desserts! So many possibilities. For breakfast ideas, I like to pair the sweet cranberry flavor with the smoky yet sweet taste of these breakfast sausages. YUM!
To make your own cranberry pancakes, use fresh cranberries and top your pancakes with butter. You can also infuse the flavor into the pancake batter if you so desire.
If you want to make your own pancake batter, follow along!
- 1 ½ cups of chopped cranberries
- ¼ cup of sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- ½ tsp salt
- 1 egg, beaten slightly
- 1 cup buttermilk
- 3 Tbsp butter, melted
- Mix together cranberries and sugar and set aside.
- In a large bowl, combine the flour, baking powder and baking soda, and salt.
- In another bowl add egg, buttermilk, and butter.
- Add to the flour mixture.
- Stir until lumpy and then add in the cranberries!
- Cook as desired.
- We like to use a griddle on medium heat until they are just right!
