Quick Garlic Shrimp Salad Recipe

Salad doesn’t have to be boring. As someone who has tried counting calories and cutting carbs, salad has always been my “go to” easy meal for busy nights and calorie-friendly options. Fresh Express created the Salad Swap to prove that you can recreate the flavors of higher-calorie cravings, like pizza and pasta, in lower-calorie salads. Itโ€™s an ingenious way to eat and feel better in the new year.

My favorite salads are a bed of greens piled high with fresh tomatoes, homemade dressing, and a warm protein. I created a quick salad that is perfect for a breezy lunch outside, but it is hearty enough for dinner.

It doesn’t take much to achieve salad perfection. Perhaps that’s why I enjoy them so much! Fresh Express bagged salads have a variety of greens including spinach, romaine lettuce, and kits like the Caesar Salad.

Fresh Express Salad

Fresh Express salads are thoroughly washed, rinsed, and gently dried, then sealed in patented โ€œKeep-Crispยฎโ€ breathable bags to keep their just-picked freshness, without preservatives. Fresh Express has a wide variety of products, including refreshing mixes and ready-to-eat Kits. They also have a special USDA-Certified Organic line. Fresh Express salad mixes can vary in price, depending on the retailer, but typically cost between $2-$4 per bag.

For my salad recipe, I opted for spinach. While spinach is not always my favorite, it pairs perfectly with shrimp and this homemade dressing.

Shrimp Salad Recipe

I like cooking my shrimp in garlic until they’re almost crispy on the outside. It’s so good! As for dressing, I started making my own salad dressing when I was my Whole 30 (which this recipe is totally Whole 30 compliant!). The dressing was inspired by The Foodie Patootie who prefers her salads to just be topped with olive oil, lemon juice, and pepper. I like the taste of red wine vinegar, and I also added fresh pepper to the mix.

Shrimp Salad

This easy salad is a variation on what I typically serve, and it didn’t require any extra prep time. Using Fresh Express helped start my salad off right. Extra garlic and pepper paired nicely with the lemon dressing.
