Quick Garlic Shrimp Salad Recipe
Salad doesn’t have to be boring. As someone who has tried counting calories and cutting carbs, salad has always been my “go to” easy meal for busy nights and calorie-friendly options. Garlic Shrimp Salad
A quick Garlic shrimp salad with mixed greens and fresh tomatoes.
Ingredients
- 1 handful of Baby Spinach
- 1 lb peeled and deveined shrimp
- 1/2 pint of grape tomatoes
- 1 green pepper, chopped
- 1 tsp crushed red pepper
- 1/2 tsp minced garlic
- 2 tbsp olive oil
- Salt & Pepper to taste
Instructions
- Cook shrimp until opaque in olive oil and garlic in a medium saucepan. Add crushed red pepper, salt, and pepper.
- Prepare salad with spinach, grape tomatoes, and chopped green peppers.
- Top salad with warm shrimp.
- Serve immediately.

I like cooking my shrimp in garlic until they’re almost crispy on the outside. It’s so good! As for dressing, I started making my own salad dressing when I was my Whole 30 (which this recipe is totally Whole 30 compliant!). The dressing was inspired by The Foodie Patootie who prefers her salads to just be topped with olive oil, lemon juice, and pepper. I like the taste of red wine vinegar, and I also added fresh pepper to the mix.
This easy salad is a variation on what I typically serve, and it didn’t require any extra prep time. Using Fresh Express helped start my salad off right.
