Growing up in Florida, it meant a day on the water with the objective of not only bringing back dinner, but also stocking up the freezer to enjoy fresh-caught fish whenever we wanted.

Going on a party charter when I was barely big enough to hold the heavier saltwater reel was one of my first memories of saltwater fishing with my father. Although we've both moved on to more advanced fishing methods, we took a recent trip in my hometown here in Florida on the same fleet that I've been fishing with since I was old enough to bait my own hook.

Since these boats can accommodate large number of anglers they are an ideal way to take your large group out on the water. They end to target smaller species of fish, preferring quantity over quality. You probably won't come away with a trophy on one of these trips but you certainly can fill a cooler after just a few hours. The boats generally have tables, plenty of seating and on-board restrooms, making them perfect for taking your younger children. The crew will take care of all your tackle and help remove your fish, making it perfect for fishing novices as well. They also tend to be much cheaper than traditional charter boats.

We finished out our day with a full cooler and a nice tan. Not only did we have enough fresh fish for that evening's dinner but we had more than enough to last us for a week's worth of meals. Fried Snapper Recipe

Yield: 4
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Here's to fry an entire fish - quick and easy!

Ingredients

  • 4 snapper, whole
  • 2 cups panko breadcrumbs
  • 2 eggs
  • 1 lemon
  • 1 tbsp. paprika
  • 1 tbsp. garlic powder
  • Salt and pepper

Instructions

  1. Preheat deep fryer to 385 degrees.
  2. Remove head, scale and gut fish. Rinse and pat dry.
  3. In a medium mixing bowl, whisk eggs, salt and pepper.
  4. In a second mixing bowl, mix bread crumbs and seasonings.
  5. Dip prepared fish into egg wash.
  6. Roll in breadcrumbs.
  7. Place whole fish into oil. Fry for 7-10 minutes depending on size.
  8. Garnish with lemon and serve over rice or your favorite roasted vegetables.
