Light Roast

Light roasting brings out the coffee’s origin, growing conditions, and processing method. Light roasts need less development time. After the initial crack, roasting is done, meaning more caffeine retention.

During the light roast, the internal coffee bean temperature is 180 – 205°C (355 – 400°F). The beans expand in size, releasing a cracking sound, and they’re not roasted beyond the initial crack. 

The flavors of these coffee beans are acidic without oil at the surface and make excellent pour-over coffee. Depending on how the light roasting processing was done, different flavors emerge.

Medium Roast

Coffee beans in this level roast at 210 – 220°C. The second crack sound is what marks the end of roast, and no more roasting beyond it. They’re heavily bodied with less acidity and caffeine. A balanced flavor profile distinguishes a balanced flavor profile. It's possible because medium roasts are allowed to develop further. 

The roasting approach is noticeable as changes that develop affect the final product. The acidity level is low, medium roasts are deeper and sweeter. Medium-Dark Roast 

Coffee beans roast from a temperature of 225 – 230°C, allowing the roast to go past the ‘second crack’. Here, significant oils released from the bean are seen on the surface. Organic acids burn, and more bitter and sweet flavors become dominant.

Dark Roast 

Here, the roasting temperatures range from 240 to 250°C. But, roasting temperatures beyond 250 °C are only used occasionally. The temperature control avoids getting coffee with strong charcoal flavors. Dark coffee roasts are void of acidity but have bitter, sweet flavors. They also have less caffeine levels than other roasts. 

Even after its origin has been replaced with flavors and aromas, dark roast has more to offer coffee lovers. But, it doesn’t mean roasted coffee should be dismissed as it makes an excellent bold or rich cup. 

The Coffee Roasting Process

Coffee beans are red when ripe and brown when dried up. After the harvest, coffee beans are dried, which builds to the coffee profile. Before the roasting process, raw coffee beans are green with a grassy aroma. Raw coffee beans smell nothing like coffee. The coffee aroma is only prevalent after roasting.
