Teriyaki Vegetable Kabobs
Summer may be coming to a close, but that doesn’t mean the party has to stop. This is actually the time of year when we Floridians can truly entertain outdoors since the humidity is lowering and the temps are dropping. We no longer have to worry about summer storms (well, kind of, hurricane season lasts until November 1st!), but at least we have a bit of a relief as far as torrential rain goes. This past Labor Day we broke out the grill and enjoyed a few adult beverages (Mike’s Hard Lemonade of course!). We made a healthy side dish that paired well with the refreshingly fruity taste of Mike’s, and we celebrated another successful summer. With the natural lemon essence and unique combination of flavors, mike’s hard lemonade is our go-to beverage for this time of year. It is easy to serve and enjoy. They have other flavors that pair well with your grilled dishes (did you catch my black cherry sangria recipe?), and it’s an ideal drink to enjoy around the fire pit after sunset.
As for our grilled side dish, meet our vegetable kabobs! Seasoned with garlic teriyaki sauce, these kabobs are simple to make, but they are full of flavor.
Teriyaki Vegetable Kabobs
A grilled side dish to pair with steak, chicken, or ribs!
Ingredients
- 4 small red potatoes, diced
- 1 red pepper, sliced
- 4 small carrots, chopped
- 1 cup of Teriyaki sauce
- 2 tbsp minced garlic
- 1 tsp chili powder
Instructions
- Use kabobs to pierce through the potatoes, pepper slices, and carrot chunks.
- Layer accordingly.
- Grill for about fifteen minutes, turning occasionally.
- Brush teriyaki garlic sauce atop them while they cook.
