Now that the daylight hours are long and the temperatures are warm, it is time to move parties outdoors. What are you celebrating this weekend? As for the recipe I contributed to that collection, this blueberry bubbly blend is a refreshing mix on a fruity cocktail. It’s not a mimosa, but it has the same effervescence and flavor of a sweet afternoon drink. In fact, I made this and drank it during brunch.
Perhaps the best part about this recipe is it really only needs two ingredients–the fresh blueberries are optional.
Spiked Blueberry Lemonade
- 1 part Simply Lemonade With Blueberry
- 1 part champagne
- Fresh blueberries
- Combine and garnish with fresh blueberries. Make a pitcher with 1 bottle of champagne and 1 bottle of Simply Lemonade With Blueberry. Serve over ice if you'd like.

I’ve made a lot of cocktails before, but I’ve never tried one with blueberry. It is usually not my favorite fruit choice, but I have to say that the lemonade flavor really made it worth my while. I thought it was refreshing, and the champagne was a good match for the sweet flavor of the lemonade.
