Cereal Rainbow Cupcakes Recipe

To get started with these vanilla cupcakes (this recipe should make 18!), you need a box of French vanilla cake mix, three large eggs at room temperture, a half-cup of softened unsalted sweet cream buter, a cup of whole milk, a tablespoon of pure vanilla extract, and purple, blue, orange, green yellow, and red gel food coloring.

You will need six bowls so that you can separate the cake mix to make the different colors along with a cupcake baking pan.

Start by preheating the oven to 350. Line muffin pan with cupcake liners Using a standing mixer, beat until combined the cake mix, eggs, milk and butter.

Divide the batter evenly between the 6 bowls. Mix in a few drops of each color into 1 bowl each and mix until combined. Scoop 1 tbsp of each color into the cupcake liners in layers. Use a knife and swirl the colors slightly. This is how you make rainbow cupcakes!

Bake in the oven for about 18-20 minutes. Pull out the cupcakes and allow to cool, before frosting.

How to Make Rainbow Frosting

You will make this from scratch. Grab two cups of unsalted sweet cream butter, softened, 5 cups of powdered sugar, two teaspoons of vanilla, six to ten tablespoons of heavy whipping cream, a large piping bag with a star tip, four small bowls, and three cups of crushed Fruit Loops cereal.

A large ice cream scooper will assist in piling the frosting high, and purple, blue, green, and red gel food coloring will make your rainbow-colored frosting.

Using a stand mixer, combine the butter, powdered sugar, vanilla, and
heavy whipping cream and mix on medium speed until stiff peaks form. Scoop 1 ยฝ cup of white frosting into another bowl. Scoop โ…› cup of frosting into the 4 bowls. Mix in the colors into their own bowls.

Using the remaining white frosting in the mixing bowl, mix in 2 cups of
the crushed Fruit Loops. Using the ice cream scooper, scoop dollops of frosting onto the cooled cupcakes.

Place the piping bag into a  large glass and fold the sides over. Using a small spoon/knife scoop the red frosting onto one side of the piping bag. Scoop the blue frosting onto another side. Repeat with two remaining colors. Scoop the white icing that you set aside into the piping bag.

Frost the top of the cupcakes and sprinkle the remaining crushed
cereal on top.

  • 6-10 tbsp heavy whipping cream
  • 1 large piping bag with a star tip
  • 4 small bowls
  • 3 cups of crushed Fruit Loops cereal
  • 1 large ice cream scooper
