Sweet Summer Sips: Pineapple Watermelon Cocktail
My favorite thing about summer is that the sun doesn’t set until 8 p.m. The days are long, and my energy levels seem to be way up in these warm weeks. My second favorite thing is the drinks. Of course. It’s no surprise that this Floridian enjoys a fruity frozen drink by the water. The more fruit, the better. To be a summer cocktail, the drink must be refreshing and light. It’s not something that you want to enjoy too quickly. You want to savor every sip. That’s why I rounded up these 15 Summer Sips with Foodie.com. One of new favorite summer sips is this pineapple watermelon cocktail. I was inspired to create watermelon mojitos this weekend, but I wanted to create something that was more than just watermelon. I started brainstorming, picked up some fresh pineapple juice, and got to work. The end result was a seriously sweet drink that can only be fully enjoyed by the water.

The ingredients were all things I had in my home already. I swear that a little bottle of Triple Sec goes a long way. From sangria to cocktails, you just never know when you’re going to need it. I also had this cane sugar left over from another recipe I made weeks ago, so I Was happy to have a little variety in the mix.
The peace, love, and party balloons are from The Flair Exchange. I love how they add an extra pop of color to my scene, and they are super cute.
This cocktail came about with a little mixing and matching, but I think I figured it out.
P.S. The cutest little photo prop is this lazy susan from uneekee. Though, it’s more than a prop. It’s a high-quality wood lazy susan that will be perfect for outdoor entertaining this summer. They have over 100 prints or you can create your own. I (finally) decided on the bold colors of the citrus print, and it’s going to make serving a bit more fun. It matches my outdoor decor, and I can’t wait to use it!
Pineapple Watermelon Cocktail
A fruity and refreshing cocktail with a twist!
Ingredients
- 1.5 oz white rum
- .5 oz Triple Sec
- 1.5 oz of pineapple juice
- 2 tbsp lime juice
- 1 tsp turbinado cane sugar
- Top with club soda
- Ice
- 1 watermelon cube, muddled
Instructions
- Muddle a cube of watermelon at the bottom of a small cocktail glass.
- Fill with ice.
- Add rum, Triple Sec, and pineapple juice.
- Stir in lime juice and sugar.
- Top with club soda.
- Stir! Sip! Enjoy!
