Paleo Meal Planning: Herb Chicken Breast Recipe

I recently shared a few paleo style recipes that were Whole 30 friendly, including paleo chicken drumsticks and garlic broccoli. I still utilize my Paleo eMeals menus, and I wanted to share a fast recipe that was inspired by my weekly meal planning. Since my commute has doubled with my new job, planning dinner is crucial to eating before 9pm. I’ve been using eMeals to get organized and provide easy, healthy recipes regularly. Since completing a Whole 30, I’ve tried to transition to a more paleo lifestyle. While I’m not perfect, I do make all of my meals at home paleo-friendly (okay, so lately I’ve had a soda here and there, but I’m trying!). My challenge for this short work week was to find a recipe that would have leftovers for lunches at work. Chicken is my staple since it’s affordable, easy to make, and easy to pack. However, I can get so tired of the same ol’ recipes week in and week out. My paleo meal plan from eMeals last week had something a bit different. Herb Chicken Breasts had some of my usual seasoning ideas (parsley, thyme) but mixed with a few items I typically don’t use when I prepare chicken (dijon mustard, lemon juice).

The original recipe called for marinating bone-in chicken breasts before grilling them. Since it was raining, and I was pressed for time, I actually just baked boneless chicken breasts. I then tossed the breasts in the seasoning mixture and let them sit in the fridge before eating for dinner and packing leftovers for lunch. Easy!

That’s one great thing about eMeals that I have come to enjoy. Most recipes are simple and also easily customized to your family’s tastes. I have substituted items in their recipes or added spices, and the dish still came out tasty.

It was great as a quick dinner but even better as leftovers on top of a leafy romaine salad with lots of tomatoes.
