Mango Rum Frozen Daiquiri
Moms rarely get a day off. Sure, a babysitter or relative can relieve a mother of her childcare duties, but a mom still worries or is running errands for the family in her spare time. This drink is dedicated to all those moms that just need a break.
This drink was inspired by a regular Saturday with a twist: my husband took our toddler out to the beach. Instead of being jealous that they were frolicking in the waves, I was thrilled that I would have the house to myself for an afternoon. When was the last time that happened? Since my husband and I work opposite work schedules sometimes, our weeks can look messy. We swap daycare drop-offs and pick-ups, trade off on those unfortunate midnight wake-up calls, and play “not it” on dirty diaper duty. Most evenings I’m too tired to even pop the cork on a bottle of wine and indulge in late-night caffeine to stay awake and finish what needs to be done around the house.
So, I’m home. Alone. This new found sense of freedom is well, freeing. I almost don’t know how to deal with it. Do I write? Do I clean? No, instead, I drink. I deserve it.
This fruity beverage was made with ingredients I already had on hand. I have created a few cocktails lately, but none of them were frozen. I was thrilled I got the proportions right on the first try! If you’re a fan of pineapple and mango, this drink is for you!
Fruit Slush Cocktail
A fun frozen drink with a kick of mango rum!
Ingredients
- 2 oz mango rum
- 1/2 cup fresh pineapple chunks
- 4 oz orange juice
- 2 oz milk (optional)
- 1/2 cup ice
Instructions
- Combine all ingredients in a blender until smooth.

How about a bar with frozen concoctions? Maybe an interactive station where we can blend up our own creations? Maybe next time I make this cocktail I’ll throw in some strawberries to the mix. The great thing about frozen drinks is that it’s hard to mess it up. Add a rum floater, a dash of sugar, or combine two different slushes to make one crazy cocktail. Frozen is fun.
I’d love to indulge in the Freedom Fruit Slush cocktail while meeting other women who understand my work, my mission, and my long-term goals. It would also be refreshing to remember that I’m not just a mom–I’m a woman, a writer, a wife. Taking the time for myself will remind me that I’m still the same person as I was before I had my son, and in some ways, I’m better today. I’m more organized, loving, and appreciative of every day. I set goals and have my sights set on entrepreneurship so that I can one day stay at home with my son more and provide for my family in a way that I could never dream of.
