Sometimes in the kitchen, your expertise and ability to get creative are limited by the tools you have available. Over the past two years, through a series of downsizings and just plain attrition of our kitchen tools, our cache of cooking accessories has been whittled down to what could be fit into a plastic bin. That’s why when Lagostino offered to let us try out their new line of Luminosa Try-Ply Stainless Steel Cookware, I was thrilled to find out that it included a 6-quart saucepan with a steamer insert. It had been several years since I had a true steamer pot.
For as much seafood, especially shellfish, that we cook, steaming hasn’t really been an option. Until now. A seafood steamer pot is a traditional Florida dish that brings out the flavor of fresh crab and shrimp while infusing those flavors into your side vegetables which are cooked right alongside. To do it right, however, you got to know how to steam your seafood like a true Floridian. Also, you need to make sure you have the right tools.
The polished hammered metal lids make for a nice aesthetic touch as well.
Here is a recipe that can you can try out that will make you feel like a true Floridian. This Florida style seafood boil uses shrimp, clams, crab, potatoes, onions, limes, and corn. And, of course, lots of seasoning! The special ingredient? Beer!
Prepare your shrimp ahead of time by peeling. We also save the shells to make a shrimp stock!
- 1 pound shrimp with shell
- 6 clams (or 1/2 lb scallops)
- 1 pound crab (snow or blue)
- 3 medium red potatoes
- 1 large onion
- 3 limes (key limes if possible)
- 4 ears of corn
- 4 cloves of garlic
- Seafood seasoning
- Fresh ground black pepper and salt to taste
- 1 stick of butter
- Fresh cilantro
- Crushed red pepper flake to taste
- 1 can/bottle of beer, prefer an IPA or citrusy flavored
- Bay leaf
- Rinse all seafood under cold water, peel corn, rough chop potatoes, and rough chop onion.
- Peel shrimp and save shells.
- In a steamer pot put shrimp shells, half an onion, 2 cloves of garlic (crushed), one lime (juiced), bay leaves, and half of can of beer.
- Let simmer for 30-40 minutes to build a seafood stock.
- Strain all ingredients from pot and add potatoes, corn, and onion.
- Add 2 cloves of garlic, other half of beer, and more seasoning.
- Boil for 20-30 minutes.
- In a separate pan add a stick of butter, minced garlic, crushed red pepper, cilantro, lime juice and salt/pepper to taste.
- Slowly melt.
- Add rest of ingredients, shrimp, crab, clams, steam for 15-20.
- Serve with fresh lime wedge and butter. Enjoy!

The possibilities are endless with a seafood boil. You can add your favorite flavors and mix and match seasonal seafood. We love shrimp here in Florida, but I wouldn’t mind making this with scallops next time.
