- 4 English muffins
- 8 slices bacon
- 4 extra large eggs
- 4 slices cheese
- 3 white mushrooms, diced
- 1 sweet red pepper, diced
- 1 tbsp. cilantro, diced

- In a large frying pan, fry bacon until crispy. Place on paper towel to absorb excess grease.
