Cilantro Lemon Chicken Skewers

Sometimes when I get off work, I just want to cozy up on the couch and relax. I never like to spend a lot of time in the kitchen, and I have been turning to freezer meals or batch cooking on the weekends. We created this simple cilantro lemon chicken skewers dish in a fraction of our usual prep time since we used an indoor grill. It heated up quickly to a high temperature for flawless cooking.

Ingredients

  • 4 chicken breast halves, cut into bite size pieces
  • 1 bunch fresh cilantro, chopped
  • 1 cup lemon juice
  • 2 teaspoons lemon pepper
  • 2 tablespoons olive oil
  • 1 tbsp minced garlic

Instructions

  1. Combine the cilantro, lemon juice, lemon pepper, olive oil, and garlic in a large bowl to marinade the chicken in for at least an hour.
  2. Heat up the grill.
  3. Thread chicken pieces onto skewers.
  4. Grill for 8 minutes.
  5. Serve with ranch and grape tomatoes.
