Sometimes when I get off work, I just want to cozy up on the couch and relax. I never like to spend a lot of time in the kitchen, and I have been turning to freezer meals or batch cooking on the weekends. We created this simple cilantro lemon chicken skewers dish in a fraction of our usual prep time since we used an indoor grill. It heated up quickly to a high temperature for flawless cooking.

- Combine the cilantro, lemon juice, lemon pepper, olive oil, and garlic in a large bowl to marinade the chicken in for at least an hour.
- Heat up the grill.
- Thread chicken pieces onto skewers.
- Grill for 8 minutes.
- Serve with ranch and grape tomatoes.
