To prepare our quick meal idea, we cooked chicken in cilantro and olive oil. As for the mushrooms, we sauteed them with garlic and olive oil.
When everything is done, assemble as you please! We created an assembly lines of sorts. It was a rice bowl station with our favorite toppings. Consider this for a unique date night at home dinner or get your kids together and let them create their favorite combinations.
For one idea, pile high with rice, chicken, and mushrooms. Add sour cream as desired.
You can also add fresh tomatoes and cilantro too. The flavorful rice shines through in this dish, and to be honest, you can just enjoy it on its own if you don’t want to prepare any toppings. You can be as creative as you’d like with their flavor varieties!
