Who doesn’t love breakfast for dinner? It turns out, 90% of Americans eat this meal, and I’m pretty sure I lived off pancakes in college. They’re easy to make, delicious and comforting. With so many unique ways to prepare them, from scallion pancakes to spicy chipotle corn waffles, pancakes and waffles are a pretty epic accompaniment to any meal. But I have to admit, I like to keep it simple once a week and have a basic Breakfast Night.
Often my husband and son even take over with dinner prep. On these evenings, the fanciest we get is the addition of toppings (whipped cream, fruit, and nuts) to our favorite Krusteaz premium pancakes and waffles! My family loves our Breakfast Nights, which are usually followed by a round of board games. And this mama might even add a mimosa to the meal every now and then… This mid-week tradition is easy like Sunday morning!
February is National Hot Breakfast Month, so why not expand on my idea by hosting a breakfast for dinner party! Make it a potluck and have every guest bring a warm dish, like overnight oats, breakfast meats, omelets and biscuits, and gravy. Set up a create-your-own pancake and waffle bar using separate dishes of various yummy toppings.
Provide a variety of colorful berries and tropical fruits; and sweets like chocolate or carob chips, sprinkles, and maybe even ice cream with caramel syrup! Maybe even serve up a batch of fried chicken to go with the waffles. Don’t forget to provide a coffee, tea, and hot cocoa table, and a juice and mimosa station, as well.
