When it comes to family night, we don’t mess around. Our schedules can be kind of crazy, and we do have a toddler. It’s impossible to head out for dinner most nights or to do something as simple as go to the movies. Instead, we bring the fun home. Whether it’s with a few movie rentals and some ice cream or with a family game night, we try to enjoy our time off together in a fun way. My husband has experienced some unique food allergies lately, so our burgers and junk food nights have taken a turn for different options. I’ve started to slowly introduce gluten free options to our weekly meal plans. One item that I saw at my local Publix was Freschetta Gluten Free pizzas.
The FRESCHETTA® Gluten Free Thin & Crispy Four Cheese Pizza has a delicious cheesy flavor, but it’s also perfect for our toddler. We don’t usually serve him pizzas with loads of toppings, so this one is a new family favorite! It has 100-percent real mozzarella, Asiago, Fontina and Parmesan cheeses. There are even single serve varieties in case you just need a fast lunch for one!

For an appetizer, my go to dish is salsa. I switch it up and try different ingredients every now and then, and last night’s salsa included chicken, cheese, and corn.
If you want to make your own cheesy side dip, all you need is shredded chicken, diced tomatoes, a can of corn, and some seasonings.
I like to do a sprinkle of garlic salt and a little of cayenne pepper for extra heat!
I melt extra cheese on top for even more cheesy goodness!
- 1 can of chicken breast, drained
- 1 can of diced tomatoes, drained
- 1 can of corn, drained
- 1 tsp garlic salt
- 1 tsp cayenne pepper, optional
- Combine all ingredients in a large bowl.
- Toss to coat.

A side of chips and specialty salsa is perfect for this gluten free pizza night. Eliminating gluten in your diet doesn’t mean you have to sacrifice great taste. This pizza is so delicious for EVERYONE! The crispy crust was loved by everyone in my family.
