Mexican-inspired dishes are my favorite this time of year. I enjoy the spicy flavors and the cool compliments like sour cream or ranch dressings to satisfy during the warm summer months. One way that I prepare Mexican food is to infuse those flavors with a crunchy salad. One of my favorite chicken dinner ideas is this southwestern chicken salad. It uses Tyson Grilled and Ready products and has all my favorite toppings combined for an absolute tasty dinner experience.

I shopped at my local Walmart to look for salad inspiration. Sometimes I like to add additional spices myself, but sometimes I like all the work done for me.
I decided to try both the Tyson Grilled and Ready Fajita Chicken Strips and the Southwestern Chicken Breast Strips (and from the looks of it, other people were interested in these products too!). While I ultimately made my salad with the southwestern style, either would make a tasty topping.
After I heated up the chicken strips, I was ready to prepare my salad. I also made up a simple pico de gallo recipe to add spice to the salad! For every specially marked bag of product purchased, one meal will be donated to a child in need by Tyson. This is a great reason to stock up on the essentials.
The combination of lime juice, cilantro, and tomatoes is perfection. So, what else did I add to my salad?
I looked for pepper jack cheese, tortilla strips, romaine lettuce, and I added garlic Texas toast croutons as well.
I served this with a side of garlic salsa and tortilla chips. I topped the salad with Verde sauce. I use that on everything!
Southwestern Chicken Salad
- 4 cups romaine lettuce, chopped
- 1 cup of Tyson Grilled and Ready Southwestern Chicken Breast Strips
- 2/3 cup shredded pepper jack cheese
- 4 tbsp pico de gallo
- 2 tbsp verde sauce
- tortilla strips
- Texas toast garlic croutons
- Place the lettuce, shredded cheese, pico de gallo in a large bowl.
- Top with warm chicken breast strips and verde sauce.
- Garnish with tortilla strips and/or croutons.
